We’re officially in the Fall season and although we’ve only had a few days of cooler weather, I am ready to trade my grill in for the crockpot!  When I get home from a long work day, I have no motivation to start cooking a meal, which is why I love crockpot meals.  They’re super easy, require very little prep time, and most importantly, they’re delicious!  Another thing that I love…tacos!  Combine the two and you have the perfect stress-free meal for the whole family.

I discovered the following recipe about a year ago and have made it countless times.  It’s very simple so you can easily add to it to make it your own!


Shredded Chicken Tacos

2 lbs chicken breast (boneless & skinless)

2 cups low sodium chicken broth

1 packet ranch seasoning

1 packet taco seasoning

Put chicken broth and both seasoning packets into crockpot and stir to combine.  Add chicken.  Cook on low for 6-8

hours or high for 4-6 hours.

That’s it!  Simple, right?  Lately, I’ve been trading the chicken broth for water because I find that the seasonings have more than enough salt to flavor the chicken.  When it’s done, you can shred the chicken right in the crockpot and it’ll soak all the deliciousness up!  I usually will use the chicken for tacos on the first night and add on cheese, lettuce, salsa, and sour cream (for a healthier option, you can use greek yogurt).  Leftovers are usually made into quesadillas, but you could also make some rice and beans and make a taco bowl or burrito…the possibilities are endless!
